1 lb Italian sausage
1 cup lentils, rinsed
1 medium onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 can (14 oz) diced tomatoes
4 cups chicken or vegetable broth
2 tsp dried thyme
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 bay leaf
Fresh parsley for garnish

In a large pot, heat olive oil over medium heat.

Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until softened.

Stir in the minced garlic and cook for another minute until fragrant.

Add the Italian sausage to the pot, breaking it up with a spoon. Cook until browned.

Stir in the lentils, diced tomatoes, chicken or vegetable broth, thyme, smoked paprika, salt, pepper, and bay leaf.

Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 30-35 minutes, or until lentils are tender.
