Today, Cheese Danishes have found their way into bakeries worldwide, often topped with various fruits, making them a versatile and beloved choice for any occasion.

Make dough using a mixer with a dough hook for 5 minutes on slow speed, then 3 minutes on medium speed.
Check dough with the window pane test for 70-80% gluten development.
Wrap dough and refrigerate overnight.
Make a butter slab with 125g unsalted butter, rolling it into a 12.5 cm square.
Refrigerate the butter book after rolling it out.
Roll out the dough into a rectangle, double the length of the butter book.
Fold the dough sides into the middle over the butter and roll it out into a long rectangle.
Make a book fold and chill for 30-45 minutes.
Repeat the rolling and folding process, then chill again for 30-45 minutes.
Roll out the final dough into a rectangle of 33 x 22 cm and cut into 6 equal pieces of 10 x 10 cm.
Place the squares on a baking tray and chill for 20 minutes.
Make a proof box by boiling water and placing it in the oven.
Shape the danish by stretching the corners to the center and pressing down.
Proof the danishes in the oven for about 2.5 hours.
Make the cream cheese filling by mixing cream cheese, sugar, vanilla, and an egg until smooth.
Pipe the filling into the proofed danishes.
Bake at 170C with fan force for approximately 18 minutes until golden brown.
Prepare a glaze with lime marmalade and microwave for 15 seconds.
Apply the glaze to the hot danishes and sprinkle with icing sugar if desired.
