Keto Granola Bars

finely shredded coconut (1/4 cup)
almond butter (1/2 cup)
coconut oil (1/4 cup)
vanilla extract (2 teaspoons)
monk fruit sweetener (1/3 cup)
flax seeds (1/3 cup)
pumpkin seeds (1/3 cup)
cinnamon powder (1/2 teaspoon)
sugar-free chocolate chips (3 tablespoons)

Prepare wet ingredients: In a bowl, combine 1/2 cup almond butter and 1/4 cup coconut oil.

Microwave the mixture for 30 seconds to melt and stir.

Add 2 teaspoons of vanilla extract and microwave for another 30 seconds, then stir again.

In a large bowl, combine dry ingredients: 1/2 cup sliced almonds, 1/3 cup flax seeds, 1 tablespoon chia seeds, 1/3 cup pumpkin seeds, 1/4 cup finely shredded coconut, and 1/2 teaspoon cinnamon (or more to taste).

Stir the dry ingredients together until well mixed.

Pour the wet mixture into the dry ingredients and stir until fully combined, ensuring the mixture is thick.

Using a bar mold, divide the mixture into 8 equal portions, placing 2 tablespoons of batter in each mold.

Press down to ensure the mixture is compact and even in each mold.

Place the mold in the freezer for at least 1 hour to set.

Prepare the chocolate topping by combining 3 tablespoons of sugar-free chocolate chips and 1 teaspoon of coconut oil in a bowl.

Microwave the chocolate mixture for 30 seconds, stirring until smooth.

Remove the bars from the freezer and carefully take them out of the mold.

Drizzle the melted chocolate over the bars.

Sprinkle Redmond's real salt over the chocolate before it hardens, and add some sliced almonds on top.
