Keto Granola Bars

1/2 cup drippy almond butter
1/4 cup coconut oil
1/4 cup golden monk fruit sweetener
1/2 teaspoon ground cinnamon
1/4 teaspoon Himalayan sea salt
1 teaspoon vanilla extract
1 large egg, beaten
1 1/4 cups unsweetened flaked coconut
1 1/4 cups sliced almonds, roughly chopped
1/2 cup chopped pecans OR chopped walnuts
3 tablespoon sunflower seeds
1 tablespoon hemp seeds, optional
1 tablespoon water, as needed
1-2 tablespoons sugar-free vegan chocolate chips, optional

In a mixing bowl, combine the almond butter, coconut oil, golden monk fruit sweetener, ground cinnamon, Himalayan sea salt, vanilla extract, and beaten egg. Mix until well combined.

Add the unsweetened flaked coconut, sliced almonds, chopped pecans or walnuts, sunflower seeds, and hemp seeds (if using) to the mixture. Stir until everything is evenly distributed.

If the mixture is too dry, add water as needed to achieve the desired consistency.

Press the mixture into a lined baking dish, ensuring it's evenly spread out.

(Optional) Sprinkle sugar-free vegan chocolate chips on top if desired.

Refrigerate or freeze until set, then cut into bars.
