Snickerdoodle Bread

1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
1/4 cup granulated sugar (for topping)
1 tsp ground cinnamon (for topping)

Preheat your oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking soda, salt, and 1 tsp of cinnamon. Set aside.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

In a small bowl, mix together the 1/4 cup of granulated sugar and 1 tsp of cinnamon for the topping.

Pour the batter into a greased 9x5 inch loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the top of the batter.

Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
