Gather 3 cups of blueberries, 1/2 cup sugar, and 2 teaspoons of cornstarch in a bowl.
Set the blueberry mixture aside.
Thaw puff pastry overnight in the refrigerator, then let it sit at room temperature for about an hour.
Unroll the puff pastry and stretch it a little to flatten out the creases.
Cut the puff pastry sheet into 4 squares and separate them.
Place a heaping tablespoon of the blueberry mixture in the center of each puff pastry square.
Make an egg wash by mixing 1 egg with a little water and brush it on the edges of the puff pastry.
Fold the pastry from one corner to another, pushing the blueberries in as needed, and seal the edges.
Use a fork to crimp the edges for a decorative look and poke a small hole in the top of each turnover.
Brush the tops with the egg wash for a golden color.
Bake in a preheated 400°F oven for about 15 minutes or until golden brown.
Let the turnovers cool slightly before serving.
