Welcome to Jeff's Pastry Farm. Starting with a pastry dough or pie dough.
Get the dough made and rolled out and in the fridge to set.
Put the bowl on the scale and press zero to tear it.
Add 10 ounces of pastry dough into the bowl.
Add 1 teaspoon of kosher salt.
Add 8 ounces of cold butter, cut into cubes, and sprinkle it in.
Pulse until you see pea-sized butter pebbles, being careful not to over-process.
Pour the dough out and add 1 cup of corn syrup, mixing until it comes together.
Gather the dough and knead it slightly, shaping it into a manageable square.
Place the dough in the fridge to rest.
Add 1 pound of blueberries into a bowl and break them up slightly.
Make candied cashews by whisking 1 egg white and 1 teaspoon of water until frothy.
Add the cashews into the egg white mixture, then sprinkle in 1/2 cup of sugar and a pinch of salt.
Spread the cashews on a parchment-lined sheet pan and roast them in the oven at 350°F for about 10 minutes.
Make the icing by mixing confectioner sugar, egg whites, 1/2 teaspoon of vanilla bean paste, and lemon juice, whisking until smooth.
Roll out the chilled dough to about an eighth of an inch thick.
Cut the dough into squares using a pizza cutter.
Fold the squares over, pressing to seal them, and cut out the middle piece so they aren't touching.
Place the pastries on a baking sheet and bake in the oven at 350°F for about 20 minutes on the top rack.
Let the pastries cool for as long as possible before serving.
