Get the dough made and rolled out and in the fridge to set.

Put the bowl on the scale and press zero to tear it.

Add 10 ounces of pastry dough into the bowl.

Add 1 teaspoon of kosher salt.

Add 8 ounces of cold butter, cut into cubes, and sprinkle it in.

Pulse until you see pea-sized butter pebbles, being careful not to over-process.

Pour the dough out and add 1 cup of corn syrup, mixing until it comes together.

Gather the dough and knead it slightly, shaping it into a manageable square.
