Take the bottom off the lettuce by hand and rip it into chunky pieces, adding it to a bowl.
Fill the bowl with cold water to soak the lettuce for freshness.
Clean the spring onions by removing the outer leaves and slicing them, then add to a container.
Wash the tomatoes, remove the eye, cut them into quarters, and take out the seeds before adding them to the container.
Wash the peppers, cut them in half, remove the fat, and slice them before adding to the container.
Use two stalks of celery, cut off the tops, and slice them into strips before adding to the container.
Wash the cucumber, cut it in half, remove the seeds, and slice it into strips before adding to the container.
Wash the radishes, cut off the tops and bottoms, and add them whole to the container.
Wash the mint and chop it roughly, then set it aside for the dressing.
Drain the lettuce from the cold water.
In a bowl, combine olive oil, salt, black pepper, finely chopped garlic, and lemon juice to make the dressing, whisking it together.
Drain the lettuce as much as possible and add it to a large bowl.
Add the dressing to the lettuce and mix it by hand.
Add all the other ingredients from the container to the bowl and mix everything together by hand, adding more dressing if needed.
Top the salad with chopped mint before serving.
