Roll out the pastry sheet to a 14in x 14in square.
Preheat the oven to 400°F.
Mix one egg with water in a small bowl.
Cut off the corners of the pastry square to make a circle, saving the scraps for decoration.
Sprinkle 1/4 cup of toasted sliced almonds and 1/4 cup of chopped parsley in the center of the circle.
Place a 1 lb round of Brie on top of the almonds and parsley.
Brush the edge of the circle with the egg mixture.
Fold two opposite sides of the pastry circle over the cheese.
Trim the remaining two sides to within 2 inches from the edge of the cheese.
Fold these two sides onto the cheese round and press the edges to seal.
Place seam side down on a baking sheet.
Cut pastry scraps into the shape of leaves or other decorations and place on top.
Brush with egg mixture to help give it a golden color.
Bake for 20 minutes at 400°F or until golden.
Let stand for 1 hour before serving with crackers.
