Preheat the oven to 400°F.
Roll out the puff pastry on a floured surface until it's larger than the original size.
Measure the wheel of Brie and cut the puff pastry accordingly, leaving enough to wrap around the cheese.
Use cookie cutters to cut out shapes from the excess pastry for decoration.
In a bowl, mix a couple tablespoons of honey with the chopped pecans and dried cranberries.
Spread the honey mixture flat on the puff pastry.
Place the Brie on top of the honey mixture and press down slightly.
Brush the edges of the pastry with the egg wash to help it stick together.
Fold the pastry over the Brie, sealing the edges, and prick the top with a fork to allow steam to escape.
Brush the top and sides of the pastry with more egg wash for a glossy finish.
Bake in the preheated oven for around 20 minutes or until puffed and golden brown.
Let the Brie en croute cool for about 10 minutes before slicing to prevent the cheese from running out.
