Thinly slice one large onion and three small onions, or two medium onions.

In a tiny Dutch oven, add the sliced onions and a little olive oil.

Cook the onions on low heat for 20-25 minutes, stirring occasionally, until they caramelize and become soft and jammy.

Add a pinch of salt to the onions while cooking.

Sprinkle about 1 teaspoon of sugar into the onions to enhance sweetness.

Add a few sprigs of fresh thyme or rosemary to the onions and let them cook for another 5-6 minutes.
