Thinly slice one large onion and three small onions, or two medium onions.
In a tiny Dutch oven, add the sliced onions and a little olive oil.
Cook the onions on low heat for 20-25 minutes, stirring occasionally, until they caramelize and become soft and jammy.
Add a pinch of salt to the onions while cooking.
Sprinkle about 1 teaspoon of sugar into the onions to enhance sweetness.
Add a few sprigs of fresh thyme or rosemary to the onions and let them cook for another 5-6 minutes.
After the onions have cooked down, add black pepper to taste.
Pour in a splash of dry white wine to deglaze the pan and lift the flavors, or use chicken stock with a splash of vinegar if preferred.
Set the onion mixture aside to cool.
Preheat the oven to 400°F (200°C).
Take a wheel of brie and cut off a small amount of the waxy top layer.
On a floured surface, roll out two sheets of puff pastry until pliable and slightly thinner.
Place the brie on top of one sheet of puff pastry, then add the cooled onion mixture on top of the brie.
Cut off excess pastry around the brie and onion mixture, then pinch the pastry together to seal it.
Brush the pastry with an egg wash made from one beaten egg mixed with a little milk or cream.
Use cookie cutters to cut shapes from the excess pastry and place them on top of the wrapped brie, brushing them with egg wash as well.
Sprinkle a pinch of salt and pepper on top of the pastry before baking.
Bake in the preheated oven for 20-22 minutes until golden brown.
Let the baked Brie en Croute cool for a few minutes before serving.
