3 cloves garlic, chopped
onion, chopped
cumin
coriander
paprika
turmeric
oregano
cinnamon
salt
pepper
chili flakes
chickpeas, drained and rinsed
crushed tomatoes
coconut milk
balsamic vinegar
flat leaf parsley or cilantro

Heat up oil of your choice in a large pan on medium heat.

Add chopped onions and cook until soft, about 5 minutes, stirring as necessary.

Add spices: cumin, coriander, paprika, turmeric, oregano, cinnamon, and chili flakes. Mix thoroughly.

Add chopped garlic and drained, rinsed chickpeas. Stir to combine.

Add balsamic vinegar and crushed tomatoes. Mix well.

Add coconut milk (the separation is normal) and stir.

Season with salt and pepper as desired and mix.

Bring to a boil, then reduce heat and simmer for 15 minutes until flavors have melded.

Serve on a bed of rice, potatoes, polenta, or anything else you may desire.

Top with your choice of flat leaf parsley or cilantro.
