Prepare the Soup Pickle by combining roasted soya beans, roasted sesame seeds, roasted Sichuan pepper, sliced tomato, ginger, garlic, chopped chilies, chopped spring coriander, olive oil, turmeric powder, roasted cumin powder, sea salt, and juice in a bowl.
Pour in 600ml of boiling hot water to the mixture and stir well to combine.
For the Hot Pickle Sauce, soak the dried red chilies in boiling hot water until softened.
In a blender, combine the soaked chilies, roasted Sichuan pepper, sliced tomato, ginger, garlic, chopped coriander stems, olive oil, sea salt, light soy sauce, and apple cider vinegar or lemon juice.
Blend until smooth, adding enough boiling hot water to achieve the desired sauce consistency.
