Mix the poolish ingredients (100g flour, 100g water, 15g fresh yeast, and 15g sourdough starter) well and let sit for half an hour to an hour to rise.

Mix the poolish with the milk (170ml), flour (400g), sugar (1T), and salt (1t) from the main dough portion.

Knead the dough by hand until it isn't sticky.

Knead in the butter (110g) a bit at a time until fully incorporated and the dough is uniform in texture.

Set the dough in a loaf pan and let rise until doubled in size (30 minutes to 2 hours depending on temperature).

Preheat oven to 190C/375F.

Brush the top with milk and optionally sprinkle with sesame seeds.

Bake for 45 minutes.
