Nutritional yeast offers a cheesy flavor with fewer calories.

1

Dice a yellow onion into a super fine dice by cutting off the ends, halving it, peeling the skin, making horizontal cuts, vertical cuts, and then thin slices.

2

Cut a red bell pepper, removing seeds and slicing it into thin pieces.

3

Heat a 12-inch cast iron skillet over medium high heat and add 2 tablespoons of extra virgin olive oil.

4

Add the diced onion and bell pepper to the skillet and sauté for about 5 minutes until softened.

5

Prep 5 cloves of garlic by smashing them with a knife, peeling, and then pressing through a garlic press.

6

Add 0.5 lb of ground pork and 1 lb of ground beef to the skillet, breaking it apart with a spatula and cooking until fully browned, about 12 to 15 minutes. Drain excess fat by tipping the pan and scooping it out.

7

Make a well in the center of the pan and add tomato paste, caramelizing it for 1-2 minutes.

8

Add the minced garlic and cook for another minute until fragrant.

9

Pour in 1 cup of beef broth and stir in 1 cup of sliced carrots and 1 cup of long grain white rice, mixing well to moisten the rice.

10

Add 1 can of fire roasted diced tomatoes and stir to combine.

11

Add 2 teaspoons of Worcestershire sauce, 1 teaspoon of oregano, 1 teaspoon of basil, and 1 teaspoon of salt, stirring everything together.

12

Bring the mixture to a boil over high heat, then cover and reduce to a simmer for 20 minutes.

13

After 20 minutes, check the rice for doneness by tasting it.

14

Top the dish with cheddar cheese, then cover with foil, creating a dome with a glass dish to prevent sticking, and let it steam for 3 to 5 minutes until the cheese is melted.
