Today, Jamaican patties have gained popularity worldwide, with variations that include vegetarian and seafood fillings, making them a versatile favorite.

Start by preparing the dough for the crust, which is the most difficult part.
Mix together 2 cups of flour, 1 tablespoon of sugar (optional), 2 teaspoons of salt, 2 teaspoons of baking powder, 1 tablespoon of cornstarch, and 1 tablespoon of turmeric powder in a bowl.
Add 1 cup of cold butter and half a cup of shortening to the dry ingredients, ensuring the butter is very cold.
Use a fork to combine the butter with the dry ingredients without melting it; if the mixture gets too warm, place it back in the fridge.
Gradually add 1 cup of ice cold water while mixing until the dough comes together, being careful not to knead too much.
Wrap the dough in plastic wrap and refrigerate it to keep it cool.
Prepare the filling by chopping onion, garlic, ginger, scotch bonnet pepper, scallion, sweet pepper, and thyme, then blend them until finely chopped, adding a little water if necessary.
Season the blended mixture with all-purpose seasoning, basil, oregano, and cayenne pepper, then store it in the refrigerator.
For the chicken filling, mince cooked chicken breasts and season with all-purpose seasoning, chicken seasoning, salt, black pepper, and turmeric.
In a sauté pan, heat coconut oil and add the seasoned chicken, allowing it to absorb the flavors.
Add coconut milk and a little water to the chicken, cover, and let it simmer.
For the seafood filling, heat half a stick of butter in a pan, add the blended spice mixture, and then add coconut milk and the seafood (shrimp and lobster) along with fish seasoning, all-purpose seasoning, and garlic powder.
Stir the seafood mixture and let it simmer, checking frequently to ensure it doesn't stick to the pan.
Roll out the dough on a floured surface, folding and rolling it multiple times to create flakiness in the pastry.
Cut the rolled dough into circles, fill with the chicken or seafood mixture, fold over, and seal the edges.
Brush the tops with egg wash (if desired) and bake in a preheated oven until golden brown.
