Peel the bananas and cut them in half, then cut them in half again.

In a frying pan, heat a couple of tablespoons of coconut oil over medium heat.

Combine the arrowroot with some milk in a separate bowl until well blended, then add this mixture to the saucepan with the creamy mixture.

Set the heat to medium-low and stir continuously until the pudding starts to thicken, which should take about a minute.

Turn off the heat and let the pudding cool before transferring it to another bowl. Chill in the refrigerator for at least 4 hours to firm up.

Once chilled, cut bananas into coins and place them at the bottom of a serving dish.
