Ingredients

Instructions

  1. 1Blend corn until smooth.
  2. 2Combine blended corn with milk, sugar, and salt in a bowl.
  3. 3Add baking powder and mix until well incorporated.
  4. 4Whisk in eggs until the batter is smooth.
  5. 5Heat butter in a skillet over medium heat until melted.
  6. 6Pour a ladle of batter into the skillet, forming a round shape.
  7. 7Cook until edges are set and the bottom is golden, about 3-4 minutes.
  8. 8Flip the cachapa and cook the other side until golden, about 3-4 minutes.
  9. 9Repeat with remaining batter, adding more butter as needed.
  10. 10Top cachapas with cheese and serve warm.

  • 1 cup cornmeal
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup butter, melted
  • 1/2 cup cheese (optional)

Instructions

  1. 1In a blender, combine the fresh corn kernels, cornmeal, milk, sugar, salt, and baking powder. Blend until smooth.
  2. 2In a mixing bowl, pour the blended mixture and add the melted butter. Stir until well combined.
  3. 3Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  4. 4Pour about 1/4 cup of the batter onto the skillet for each cachapa. Cook for about 3-4 minutes until bubbles form on the surface.
  5. 5Flip the cachapa and cook for another 3-4 minutes until golden brown.
  6. 6If using cheese, place a slice of cheese on top of the cachapa after flipping it, allowing it to melt slightly.
  7. 7Remove from the skillet and keep warm while you repeat with the remaining batter.
  8. 8Serve cachapas warm, optionally topped with more cheese or your favorite toppings.
