Light coconut milk reduces calories while maintaining flavor.

Black beans are lower in calories and pinto beans are often cheaper.

On medium heat add the coconut oil to a pot, sauté the drained rice and bacon until bacon fat is rendered.

Add onion, garlic, oregano, beans, and coconut milk, bring to a simmer, reduce heat to low and cover to retain steam.

Ensure all the steam is trapped into the pot as the steam helps the rice to pop.

Turn rice over with a fork and not a spoon. Check that it’s finished.

Turn off the stove and let rice sit for 5 minutes. Fluff with fork and serve warm.
