Honey Harissa Chicken Bowls

Slice one whole onion very thinly.

Add sliced onion to a container or jar.

Wrap the marinated chicken with plastic wrap and refrigerate while preparing other components.

Rinse and wash rice multiple times until water runs clear, about 3-4 times.

Prepare taziki sauce by grating 3/4 of a mini Persian cucumber and mixing with Bulgarian yogurt, grated garlic, juice of 1 lemon, salt, pepper, chopped parsley, and a pinch of dried mint.

Assemble the dish by adding saffron rice to a bowl, followed by honey harissa chicken, cucumber and tomato feta salad, pickled onions, feta cheese, and taziki sauce.
