Wash your hands before starting.
Preheat the oven to 180°C for a fan oven.
Gather all your ingredients and equipment: scales, two bowls (one for dry ingredients, one for wet), a sieve, and a couple of spoons.
In a large bowl, combine 280 grams of white rice flour and 280 grams of brown rice flour.
Add 0.5 teaspoons of xanthan gum and 2 teaspoons of bicarbonate of soda to the flour mixture and mix well.
In another bowl, add 100 grams of goat butter (melted), 170 grams of maple syrup, 1 teaspoon of vanilla extract, and 2 teaspoons of treacle. Mix these wet ingredients together.
Make a well in the dry ingredients and pour in the wet mixture, mixing until combined.
Stir in 100 grams of soft brown sugar and then fold in 100 grams of dairy-free chocolate chips, ensuring even distribution.
Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them apart.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
