Clean the chicken with lime juice and vinegar.
Marinate the chicken with spices for about 10 minutes.
Heat vegetable oil in a large pot until hot.
Add the marinated chicken and cook until browned, about 10 minutes.
Remove the chicken and set aside, leaving the oil in the pot.
In the same pot, add chopped onions, garlic, and bell pepper; sauté until softened.
Stir in black mushrooms, carrots, and scotch bonnet pepper; cook for another 5 minutes.
Return the chicken to the pot and add bay leaves and thyme.
Add water to cover the chicken and bring to a boil.
Cover and simmer for 20 minutes until the chicken is cooked through.
