Measure 1 cup of bulgur wheat and rinse it well.
Peel the zest from 1 lime.
Add 3 cinnamon sticks and 1 star anise to the ingredients.
In a bowl, combine the rinsed bulgur wheat with 2 cups of milk (or water) and let it soak for at least 3 hours (overnight is preferable).
In a pot, add 10 cups of water and bring it to a boil.
Once boiling, add the soaked bulgur wheat and 1/2 teaspoon of salt.
Cook on medium heat for about 20 to 30 minutes, ensuring the lid is not placed directly on the pot to avoid overflow.
After cooking, remove the cinnamon sticks, star anise, and lime peels.
Blend the mixture in batches, adding water as needed to ensure it blends smoothly.
Return the blended mixture to the pot and add 1/2 cup of brown sugar, adjusting to taste.
Add 1/8 teaspoon of nutmeg, 1 teaspoon of ground cinnamon, and 1 teaspoon of vanilla extract.
Stir in a piece of butter and 3/4 of the can of evaporated milk, checking the consistency as you go.
Let it simmer on low for about 20 minutes until the desired consistency is reached.
