4 ripe plantains
1 cup vegetable oil
1/2 tsp salt
1/2 tsp pepper

Peel the plantains and cut them into diagonal slices about 1 inch thick.

Heat the vegetable oil in a deep frying pan over medium heat.

Once the oil is hot, carefully add the plantain slices in batches, making sure not to overcrowd the pan.

Fry the plantains for about 3-4 minutes on each side, or until they are golden brown and crispy.
