Cut the jalapenos in half lengthwise and scrape out the seeds using a teaspoon.

Wrap each stuffed jalapeno with a piece of streaky bacon, securing with a toothpick if necessary.

Prepare the smoker (Oklahoma Joe's Rambler) and set it to run at 250 to 275°F (121 to 135°C).

Smoke the jalapenos for about 30 to 45 minutes, until the bacon is crispy, the jalapenos have softened, and the cheese has colored nicely.
