Soak 1 cup basmati rice in water for about 30 minutes to 1 hour.

In a non-stick pan, heat 2 tablespoons of butter.

Add 2 bay leaves, 1 inch cinnamon stick, 1 flower star anise, and 5-6 black peppercorns to the pan and sauté until fragrant.

Drain the soaked rice and add it to the pan; sauté for 2 minutes.

Open the tin of cocktail fruit and add it to the pan, followed by the tin of mixed fruit juice; mix well.

Add a pinch of salt, saffron strands, and 1/2 cup grated jaggery to the mixture; stir well.

Add some fresh mint leaves and sprinkle a little water; cover and cook until the rice is done.

Cut the pineapple in half and scoop out the flesh to create a thin wall; chop the scooped flesh.

In another non-stick pan, heat 1/4 cup sugar with 2 tablespoons of water over medium heat until caramelized.

Add the chopped pineapple pieces to the caramelized sugar and mix well.

Remove the lid from the rice and gently fluff it to avoid breaking the grains.

Fill the hollowed-out pineapple halves with the rice and place them on a serving plate.
