These delightful fritters celebrate the sweet, starchy flavor of ripe plantains, which are a staple in Caribbean cuisine. Traditionally served warm, they can be enjoyed on their own or with a variety of dips. Modern variations may include additional spices or fillings, showcasing the versatility of this simple yet satisfying dish.

Soak salted fish in water to remove salt.
Boil salted fish pieces in hot water for 20 to 25 minutes.
Peel ripe plantains and cut them into smaller pieces.
Blend the plantains in a blender to make a puree without adding liquid.
In a bowl, mix all-purpose flour, baking powder, a pinch of salt, and brown sugar.
Add green seasoning to the dry ingredients and mix well.
Add the plantain puree to the dry mixture and combine.
Gradually add room temperature water to knead the dough until it comes together.
Roll the dough into small balls and cover them while preparing the salted fish.
Chop onion, green onions, garlic, and hot pepper finely for the salted fish mixture.
Fry chopped onions in a pan until softened, then add hot pepper and salted fish.
Grate garlic into the pan and mix well with the salted fish and onions.
Add tomato paste to the mixture and stir to combine.
In a separate bowl, beat eggs with black pepper, salt, and oregano.
Create a well in the salted fish mixture and pour in the beaten eggs.
Slowly mix the eggs into the salted fish until cooked through.
Heat cooking oil in a Dutch oven for frying the bakes.
Dust excess flour off the bakes before adding them to the hot oil.
Fry the bakes until they swell and turn golden brown on both sides.
Drain the fried bakes on paper towels to remove excess oil.
