1

Slice one large yellow onion and set aside.

2

Cut 5 to 6 cloves of garlic in half and set aside.

3

Mix together 2 tablespoons paprika, 1 teaspoon garlic powder, 1 teaspoon pepper, 1 teaspoon oregano, and 1 teaspoon salt in a bowl to create a dry rub.

4

Dry the pork loin with paper towels and apply the dry rub all over the pork.

5

Make slits in the pork and insert the garlic halves into the slits.

6

Place the sliced onion at the bottom of the slow cooker.

7

Put the pork loin on top of the onions in the slow cooker.

8

Pour 12 to 15 ounces of root beer over the pork.

9

Cover the slow cooker and cook on high for 4 hours or low for 8 hours.

10

After cooking, check the internal temperature of the pork, which should be between 195°F to 210°F.

11

Remove the pork from the slow cooker and discard most of the liquid, leaving some for moisture.

12

Shred the pork using two forks, mixing in the onions.

13

Add barbecue sauce (about 2/3 to 1 cup) to the shredded pork and mix well.

14

Serve the pulled pork on buns with pickles.
