Tofu Tacos

1 block (14 oz) extra firm tofu
8 small corn tortillas
2 tablespoons taco seasoning
2 cups spinach
1 cup guacamole
1/2 cup green onion, chopped
1/2 cup red onion, diced
1/4 cup nutritional yeast
2 tablespoons olive oil
1 medium plantain, sliced
1 cup strawberries, sliced

Start by taking the extra firm tofu out of the packaging and rinse it off.

Press the water out of the tofu using napkins to remove excess moisture.

Heat olive oil in a frying pan while pressing the tofu.

Once the tofu is pressed, add it to the frying pan to fry it up.

Season the tofu with taco seasoning and any other regular seasonings you prefer.

Plate the tacos by spreading guacamole on the corn tortillas.

Add the fried tofu on top of the guacamole.

Layer spinach, green onion, and red onion on top of the tofu.

Sprinkle nutritional yeast on top for a cheesy flavor.

Wrap the tacos and serve with cooked plantains and strawberries.
