Tofu Tacos

1 block of tofu
3 tablespoons low sodium taco seasoning
2 tablespoons low sodium soy sauce or amino product
1/4 cup crushed tomatoes

Drain the water off the tofu block.

Crumble the tofu into a texture similar to feta cheese.

Add about 3 tablespoons of low sodium taco seasoning to the crumbled tofu.

Add 2 tablespoons of low sodium soy sauce or an amino product for browning.

Incorporate about 1/4 cup of crushed tomatoes for color.

Add chopped onions to the mixture.

Stir everything together using your hands to ensure the tofu is covered with the flavors.

Transfer the mixture to a lightly oiled baking pan or one lined with parchment paper.

Bake in a 400ยฐF oven for 45 minutes, stirring once midway through.

Once done, fill taco shells or bib lettuce with the tofu mixture and top with fresh onion, avocado, and cilantro or parsley.
