Traditionally enjoyed during gatherings or as a light meal, it reflects the resourcefulness of Turkish cuisine, utilizing simple ingredients to create a flavorful dish. Today, it has gained popularity beyond Turkey, often featured in vegetarian and vegan menus worldwide.

Wash 1 cup of red lentils and place them in a pot.
Add 3 cups of water to the pot and bring to a boil.
Once the lentils are cooked (keep slightly juicy), remove from heat and add 1 cup of fine bulgur.
Mix well and set aside.
In a skillet, add finely chopped onion and olive oil, and sauté until translucent.
Add tomato paste, chili paste, and spices to the skillet and cook for a few minutes.
Combine the sautéed mixture with the lentils and bulgur, and mix well.
Add salt and mix again.
Finely chop the spring onions and parsley, and add them to the mixture along with lemon juice.
Knead the mixture well and form walnut-sized pieces into round shapes.
Prepare yogurt with salt to taste and drizzle over the lentil balls.
In a small skillet, lightly fry the paprika and red pepper flakes in olive oil and drizzle over the yogurt before serving.
