3 cups sweet potatoes, peeled and cut into 1/4 inch pieces
1/4 cup red onion, diced finely

Bring over the presentation board for the hummus and toppings.

Prepare the sweet potatoes by peeling and cutting them into 1/4 inch pieces.

Mix the sweet potatoes with 1/4 cup of diced red onion, garlic powder, onion powder, black pepper, Chipotle chili powder, salt substitute, 2 tablespoons of aquafaba, and 1 tablespoon of lemon juice.

Roast the sweet potatoes in the oven at 400°F for about 35 minutes, stirring partway through and adding more lemon juice if they look dry.
