Sugar Free Chocolate Bark Recipe

The first thing to do is prepare the ingredients. For the chocolate, dark chocolate is perfect since it is not too sweet and pairs great with any nuts. Prepare your chocolate bars by chopping them into little pieces so they will melt easily, or if you do not have much time, you can just use chocolate chips. You can prepare the peanuts by rinsing them under cold running water and then patting them dry with a clean kitchen towel before using them.

Using the instant pot, add hot water and let it simmer for a minute. Put the glass bowl on top and start melting the chopped chocolate and coconut oil together. Stir with a spoon to combine them. Keep stirring until the chocolate is completely melted and smooth. You can use a saucepan with a bowl as a double boiler if you do not have an instant pot.

Add the peanuts to the melted chocolate and mix with a rubber spatula until well combined.

Pour the chocolate mixture into the silicone mold. Spread the chocolate using a rubber spatula until it forms a bark, similar to a candy bar. Scrape the sides to get the perfect bar when the bark is chilled. Optionally, you can tap the silicone mold to set the mixture evenly.

Place the baking sheet in the refrigerator for at least 1 hour or until the bark is firm. Once chilled, remove from the mold and serve. You can break them into little pieces before serving.
