2

Prepare the green seasoning by blending celery leaf, spicy thyme, scallion roots, garlic, sweet basil, broad leaf thyme, and flavored pepper with a little water to desired consistency.

3

Combine all sauces in a bowl, adding brown sugar and mixing well.

4

Combine all dry ingredients in a separate bowl.

5

Season the chicken with half of the dry ingredients, all of the green seasoning, and half of the sauces; mix well and let sit for 1 to 1.5 hours.

6

Boil water and add chow mein noodles along with a teaspoon of adobo; do not cover the pot.

7

After boiling, drain the chow mein and rinse with cold water to stop the cooking process.

8

Heat 1/4 cup of oil in a frying pan over medium-high heat, then add the chicken and cover to cook until the water released by the chicken evaporates.

9

Once the chicken is cooked, remove it from the pan and set aside.

10

In the same pan, heat 2 tablespoons of oil and crush two cloves of garlic, allowing it to infuse the oil.

11

Add carrots and green peas first, cooking for 2-3 minutes before adding the remaining vegetables except for scallions.

12

Stir-fry the vegetables without adding salt or dry ingredients for about 2 minutes, keeping them crunchy.

13

Add the cooked chow mein, chicken, scallions, remaining sauce, and dry ingredients to the pan; turn off the heat and mix everything well together.

14

Taste and adjust seasoning with adobo or garlic salt as needed.
