Chop bell peppers and onion, or use a bag of frozen fajita vegetables.

Place half of the vegetables in the slow cooker.

Add 3 pounds of fat-trimmed chicken breast to the slow cooker.

Sprinkle in half a packet of taco seasoning mix.

Pour in 1 ounce of lime juice, 1 tablespoon of honey, and 1 tablespoon of minced garlic.

Add 1 can of diced tomatoes to the slow cooker.

Top with the remaining fajita vegetables and lightly mix everything together.

Set the slow cooker on high for 3 hours.

After 3 hours, shred the chicken breast in the slow cooker.

Continue cooking on low heat for an additional hour.
