Seco, which means 'dry' in Spanish, refers to the slow-cooked beef stew that is flavored with herbs and spices, often enjoyed during family gatherings and celebrations. The dish is typically served with frejoles, or beans, which add heartiness and nutrition. Today, variations of this dish can be found throughout Peru and in Peruvian restaurants worldwide, showcasing the diverse flavors of Peruvian cuisine.

Non-alcoholic beer maintains flavor without alcohol.

Wash and clean the beef to remove excess fat, using vinegar and lime.
Season the beef with crushed pimento seeds, black pepper, all-purpose seasoning, italian seasoning, and browning.
Add hot and spicy soy sauce, chopped onions, french thyme, garlic, and scallion to the beef.
Combine everything together to ensure the beef is properly seasoned.
Cover the seasoned beef and place it in the fridge to marinate overnight.
The next day, heat a small amount of vegetable oil in a pressure cooker.
Add the marinated beef and warm water, ensuring the water covers the beef.
Pressure cook the beef for approximately 25 minutes.
After cooking, season the beef again with a small amount of all-purpose seasoning and italian seasoning.
Add more onions, scotch bonnet pepper, garlic, french thyme, and scallion to the beef.
Stir in a small amount of ketchup for thickness and taste.
Add broad beans to the mixture and cover to simmer until cooked through.
