Royal icing is a classic icing used in cake decorating, particularly for intricate designs and decorations on cookies and cakes. It dries hard, making it ideal for creating detailed decorations that can last for a long time. This icing is commonly used during festive occasions, especially around holidays like Christmas and Easter, where decorated cookies are a tradition.

Aquafaba is a plant-based alternative, while egg substitutes can be more affordable.
Add meringue powder to powdered sugar.
Mix the powdered sugar and meringue powder together.
Add water and flavoring (vanilla extract) to the mixture.
Mix on low speed until it starts to come together.
Add more water gradually if the mixture is too crumbly.
Continue mixing on low to medium speed for about five minutes until fluffy and opaque.
Check for stiff peaks to ensure the icing is at stiff consistency.
Thin down the icing with more water to achieve piping consistency.
Fill a piping bag using a cup to avoid mess.
Create flood consistency icing by adding more water until it flows back to a flat surface in about 10-15 seconds.
Let the icing sit for 30 seconds to a minute to remove air bubbles.
Pop air bubbles with a spatula and mix the icing again if necessary.
Fill the piping bag with flood consistency icing and secure it with a bag clip.
