Instructions

  1. 1In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. 2In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. 3Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  4. 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. 5Divide the dough into two equal portions, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
