Pour the coconut milk and honey mixture into a measuring cup and set aside to cool.

In a food processor, combine old-fashioned rolled oats, pecans, and cinnamon and process until it resembles coarse flour.

Add pitted Medjool dates to the food processor and continue processing until clumpy.

Add a little almond milk to the mixture for moisture and process until it becomes dough-like.

Transfer the dough mixture to a bowl and form it into a big ball of dough.
