Add diced tomatoes and cook until softened, about 5 minutes.
Mix in green bell pepper and carrots, cooking for an additional 3-4 minutes.
Add sweet potatoes, stirring to combine with the vegetables.
Pour in coconut milk and bring to a simmer.
Season with coriander, cumin, turmeric, salt, and black pepper.
Cover and cook until sweet potatoes are tender, about 15-20 minutes.
Remove from heat and stir in lime juice.
Garnish with fresh cilantro before serving.
