Start by making the crust. Take 1 and 1/4 cups of flour and place it in a food processor.
Add 1/4 teaspoon of salt and 1 tablespoon of sugar to the flour in the food processor.
Mix the flour, salt, and sugar together before adding the butter and shortening.
Cut 6 tablespoons of butter into pieces and add it to the flour mixture.
Add 4 tablespoons of butter Crisco to the mixture.
Blend until incorporated, then add 3 to 4 tablespoons of ice water gradually until the dough starts to form a ball.
Once the dough forms, wrap it in cellophane and place it in a ziplock bag if storing for later use.
Roll out the dough on a floured surface to your desired thickness.
Set the rolled-out dough aside and prepare the apples.
Peel and chop 3 apples into chunks about a third of an inch each.
Place the chopped apples into a bowl and add 1/4 cup of white sugar and 1/4 cup of brown sugar.
Toss the apples with your hands to combine the sugars evenly with the apples.
Add 3 tablespoons of flour to the apple mixture to bind the juices when cooking.
