Keto Brownies

2 sticks butter (1 cup melted)
1/2 cup sugar-free chocolate chips (Lily's semisweet)
1 1/2 cups granular erythritol
4 large eggs
1 teaspoon vanilla extract
1/8 teaspoon salt
3/4 cup cocoa powder
1 cup cakes and cookies flour (110g)

Melt 2 sticks of butter in a pot on the stove until completely melted.

Add 1/2 cup of sugar-free chocolate chips to the melted butter and stir until completely melted. If needed, return to the stove for a minute to ensure it's fully melted.

Mix in 1 1/2 cups of granular erythritol until smooth, returning to the stove if necessary to eliminate any granular texture.

Pour the chocolate mixture into a bowl.

Break 4 eggs into the bowl one at a time, whisking after each addition until well combined.

Add 1 teaspoon of vanilla extract and whisk it into the mixture.

In a separate bowl, combine 1/8 teaspoon of salt, 3/4 cup of cocoa powder, and 1 cup of cakes and cookies flour.

Switch to a spatula and mix the dry ingredients into the wet mixture until no dry ingredients are visible, being careful not to use a mixer.

Pour the brownie batter into a 9x3 dish and smooth it out evenly.

Bake in the oven at 350°F for 25 minutes.

Allow the brownies to cool for a few minutes before cutting into them.
