Remove from heat and let cool slightly.
Lay flatbread on a clean surface; spoon the egg and veggie mixture onto the center.
Sprinkle cheese, avocado, and lettuce over the filling.
Roll the flatbread tightly around the filling to form a wrap.
Slice the Rolex in half for serving.
Serve with hot sauce or salsa on the side.
