Gather assorted seasonal vegetables: carrots, radish, zucchini, lettuce, and spinach.

Use 1 cup of ground beef for protein, which can be replaced with ground pork or omitted.

Marinate the ground beef with 1 tablespoon of minced garlic, pepper, salt, 1 tablespoon of soy sauce, and 1 tablespoon of sugar. Mix well.

Peel and cut the radish into very thin strips. Place in a bowl, add 1 tablespoon of rock salt, mix, and set aside for 10-15 minutes.

Prepare the rest of the vegetables: cut carrots into long thin strips, and for spinach, remove the roots and cut into 2-3 inch lengths. Blanch the spinach later.

Cut 3-4 leaves of lettuce into strips for freshness in the bibimbap.

Soak 100 grams of dried shiitake mushrooms for 20 minutes, then squeeze and stir-fry in a non-stick pan with 1/2 tablespoon of oil, 1/2 tablespoon of minced garlic, and a slight touch of salt. Add 1/2 tablespoon of sesame oil before removing from heat and set aside.

In the same pan, stir-fry the carrots with a little oil and season with salt. Add 3-4 tablespoons of water to help cook the carrots faster. Once softened, drizzle with 1/2 tablespoon of sesame oil and set aside.

Add 1/2 to 1 tablespoon of oil to the pan, then add zucchini, season with salt, and add 4 tablespoons of water. Once soft, drizzle with 1-1/2 tablespoons of sesame oil and set aside.

Blanch spinach in boiling water with a little rock salt until dark green, then strain. Season with 1/2 teaspoon of minced garlic, salt to taste, 2-3 pinches of sugar, and 1/2 teaspoon of patis. Drizzle with sesame oil and set aside.

Prepare a spread of vegetables: lettuce, mushrooms, carrots, zucchini, and spinach. Optionally, add blanched bean sprouts (togue) seasoned similarly to spinach.
