Pasta, Chickpea & Spinach Soup

3 Tbsp extra virgin olive oil
1 onion, finely chopped
3 sticks celery, finely sliced
4 garlic cloves, roughly chopped
sea salt to taste
200g tinned whole tomatoes
1L chicken or vegetable stock
1L water
2 fresh bay leaves
2 x 425g tin chickpeas, drained and rinsed
150g short pasta (e.g., gnocchetti sardi)
1 bunch of spinach, roughly chopped
large handful of flat leaf parsley, roughly chopped
lemon juice, to serve
chilli flakes, to serve
grated parmesan, to serve

In a large pot that you have a lid for, warm the olive oil over a low-medium heat.

Gently fry the onion, celery and garlic with a pinch of salt for 10 minutes or until soft and just beginning to colour.

Pour in the tomatoes and break them with the back of a wooden spoon.

Add the stock, 1 litre of water and bay leaves and increase the heat to medium.

Pop the lid half on the pot and simmer for 20 minutes until slightly reduced.

Add in the chickpeas and simmer for another 10 minutes.

Stir in the pasta and cook for a few minutes shorter than it recommends on the packet.

Now add in the spinach and continue to simmer for a minute longer.

Check for seasoning and ladle into bowls.

Top with parsley, lemon juice, chilli flakes, grated parmesan and a good drizzle of extra virgin olive oil.
