1 T-bone or porterhouse steak, about 1 inch thick and 750g
2 Tbsp neutral oil, like avocado oil, divided

2 Tbsp extra virgin olive oil
1 bunch fresh rosemary
1 bunch fresh sage
3 garlic cloves, whole
900g fingerling potatoes, cut in half lengthwise
2 Tbsp extra virgin olive oil
2 garlic cloves, minced
1 tsp fresh thyme, minced

Freshly ground black pepper, to taste
2 Tbsp freshly grated parmesan cheese
2 Tbsp fresh parsley, minced
2 bunches (about 300g) broccolini, roughly chopped into bite-sized pieces
2 Tbsp extra virgin olive oil
4 garlic cloves, thinly sliced
1/4 tsp red pepper flakes
1 Tbsp capers
5 olives, pitted and roughly chopped
1 tsp salt

Preheat oven to 400°F.

Add potatoes, oil, garlic, thyme, salt, and pepper to a large bowl and toss to combine, making sure potatoes are evenly coated.

Transfer potatoes to a baking sheet and arrange in a single layer, cut side down.

Bake until potatoes are browned and crisp and can easily be pierced with a fork, flipping halfway through, about 40 minutes total.

While potatoes are roasting, bring pot of salted water to a boil.

Add broccolini to the pot of boiling water and blanch until bright green, about 2 minutes.

Meanwhile, pat the steak dry to remove excess moisture.

Rub all sides with 1 Tbsp neutral oil and season both sides with salt and pepper.

Place a large cast-iron skillet over medium-high heat and allow to heat for 5 minutes.

Add 1 Tbsp neutral oil onto the preheated skillet, followed by the steak.

Sear the steak about 5 minutes on the first side.

Flip the steak, and add in the olive oil, herbs and garlic cloves. Baste the steak in the herbed oil as it sears on the second side, about 3 minutes.

Turn the oven on broil when there is 5 minutes left for the potatoes.

Place the cast-iron skillet with the steak, herbs and garlic in oven for about 5 minutes (for medium rare).

While the steak and potatoes are in the oven, heat 2 Tbsp oil in a large pan over medium heat.

Sauté garlic and red pepper flakes for about 1 minute, until fragrant.

Add broccolini and sauté for another 2-3 minutes, until slightly tender but still crisp.

Stir in capers and olives into the broccolini and season with salt. Set aside.

Remove steak and potatoes from the oven.

To check for steak doneness, an instant-read thermometer should register 130°F for medium rare.

Allow steak to rest 5 minutes so that the juices are retained when the meat is cut.

Sprinkle potatoes with parmesan and parsley.
