1

Start by browning pieces of rum steak in a pan on high heat until almost burned.

2

Add 500 ml of water to stop the cooking and then add 500 ml of beef stock.

3

Bring to a boil, then reduce heat and simmer for at least 30 minutes.

4

Melt 50 g of butter in a cast iron pan.

5

Add the sliced onions and cook on medium to low heat until nice and brown, about 30 minutes.

6

Add salt and pepper to the onions while cooking.

7

Once the onions are brown, add the stock gradually to deglaze the pan, scraping up the caramelization from the bottom.

8

Add the bouquet garni to the soup and simmer for another 20 minutes.

9

Remove the bouquet garni and taste the soup to adjust seasoning if necessary.

10

In oven-safe bowls, layer two pieces of toasted bread at the bottom, then pour the soup on top.

11

Add more bread to fill the bowl, then top with 100 g of cheese (up to 200 g can be used).

12

Place under the grill until the cheese is melted and bubbly.
