Baked Gnocchi

500g gnocchi
1 x 400g can crushed tomatoes or napolitana sauce
1 cup frozen baby peas
150g scamorza mozzarella, sliced
1 handful of freshly grated parmesan, plus extra for garnish
1 tbsp extra virgin olive oil
100g basil pesto
A few leaves of basil, to garnish
Salt

Preheat oven to 375°F (190°C).

In a baking dish, combine gnocchi, crushed tomatoes or napolitana sauce, frozen baby peas, scamorza mozzarella, parmesan, olive oil, basil pesto, salt, and pepper.

Mix gently to combine all ingredients.

Bake for 20 minutes until golden and bubbly.

Garnish with fresh basil before serving.
