Chipotle Barbacoa Beef Cheeks

Cultural Context

Originating from the central highlands of Mexico, barbacoa is traditionally made by slow-cooking meat in a pit covered with maguey leaves. This method preserves moisture and infuses the meat with rich flavors. Today, barbacoa has become a staple in Mexican cuisine, often served at celebrations and family gatherings, with variations found across the globe. Chipotle barbacoa, featuring the smoky heat of chipotle peppers, has gained popularity in modern Mexican-American cuisine, especially in taco shops and restaurants.
