Line two baking trays with baking paper.

Preheat the oven to 170 degrees centigrade fan.

In a food processor, combine 200 grams of self-raising flour and 75 grams of cold butter until it resembles fine breadcrumbs. Alternatively, use the rubbing in method with your hands.

Add 0.5 teaspoon of cinnamon, 0.5 teaspoon of nutmeg, 75 grams of caster sugar, a pinch of salt, and 80 grams of mixed dried fruit with mixed peel to the mixture.

Beat 2 eggs and add them to the mixer, pulsing to combine.

Gradually add around 50 ml of milk, bit by bit, until the mixture is slightly sticky but not stiff.

Divide the mixture into about 10 portions, ensuring they have space between them as they will expand during cooking.

Place the portions in the oven and bake for around 20 minutes.

Once cooked, place the rock cakes on a wire rack to cool.
